NUTELLA FILLED CHOCOLATE CHIPS COOKIES

This cookies are everything you could possibly ask for in a cookie. Crunchy on the outside, chewy on the inside with a sweet, soft heart in the centre (just like the perfect man, right?).

They are so easy to make and in no time you will have a decadent cookie to munch on during a gloomy rainy day. It does get a little bit messy with the Nutella filling, but it is all worth it!

Gather some friends, pick a movie (or your latest Netflix obsession) and make a comforting hot drink. You could also share the cookies with them – lol.

I promise your mood will be instantly lifted as soon as you smell the delicious sweet scent coming out of the oven.

The cookie dough is actually not too sweet so it balances the sweetness of the Nutella perfectly. They can be stored in an airtight container for up to 1 week, but I’m sure they won’t last that long. Mine didn’t!

Takes 30-40 minutesMakes: about 15

Ingredients:

  • 120 g butter, room temperature
  • 2 eggs
  • 1 tsp vanilla extract
  • 250 g plain flour
  • 1 tsp bicarbonate of soda
  • 100 g chopped chocolate or chocolate chips ( I’ve used milk chocolate, but you could also use dark)
  • 150 g Nutella
  • a pinch of salt

Instructions

Preheat your oven to 180ºC (350ºF).
Combine together the butter and sugar using an electric mixer or wooden spoon until you get a fluffy and creamy consistency.
Add in the vanilla extract and the eggs and mix until smooth.
Mix the flour with the baking soda e salt and add them to the mixture. Whisk until well combined.
Fold the chocolate chips into the batter with a wooden spoon or spatula.

Measure out about a tablespoon of mixture for each cookie and flatten it out into the palm of your hand. Form a little well in the middle then add 1 teaspoon of Nutella. Roll the cookie dough back up covering the Nutella center.

Place the cookies on a baking tray lined with parchment paper making sure to leave at least 3 cm between each cookie.

Bake them for 12-14 minutes or until the edges are golden brown.

Take them out of the oven and leave them to cool for a couple of minutes. Remove the cookies from the baking tray and place them on a wire rack to cool completely.

No more waiting now! Just enjoy!
